Bacon and Egg “Muffins”

Ingredients: (for each serving)
1-2 slices of bacon
1-2 eggs
Salt and ground pepper (black or white) to taste
Herbs (optional): basil, rosemary, oregano, parsley, dill or thyme.

Microwave, broil or fry the bacon until it’s half done. Form the slices into a ring and place in a well greased muffin pan so that it lines the side of the “muffin”. Crack the eggs into the center. Season and bake in a preheated 350F (180C) oven until the eggs are cooked (for about 10 minutes). Top the “muffin” with herbs and enjoy your morning!
